I love making this really simple dip for veggies – it’s quick, easy and good for you too! Avocados have been known to lower cholesterol levels in the blood, regulate blood pressure and has a rich supply of vitamins and minerals.

Quick Avocado Dip

1 avocado
¼ tomato – you can add more if you like but if you too take out the seeds or the dip will become too watery
1/8 tsp cayenne pepper (this adds a spicy after taste. If you like your spice up front add a couple of drops of  tobasco sauce instead)
1 TBSP light mayo
Pepper to taste

Chop up ¼ of a medium tomato in to small chunks

Remove pit and skin of avocado and add to a bowl with tomato. Add remaining ingredients and mash together with a fork.

Serve with veggies or pita bread.
