I hate to say it but, all desserts are not created equal. There are those that are sinfully decadent, those that are healthy for us and thus don’t feel much like dessert and those that are tasty but still have health benefits. These Meringues fall in the third category.

Made from mainly egg whites this is a great dessert for anyone who is trying to get some more protein in their diet or want the heath benefits of eggs without having to have them as a meal.

Meringue Desserts
4 egg whites
5 TBSP of white sugar
1 TSP lemon juice
Banana
Strawberries
Chocolate sauce, honey or powdered sugar

Start by using a hand mixer to start beating your egg whites. Add sugar 1 TBSP at a time. After your first TBSP of sugar add lemon juice. Before adding any other sugar, ensure that all the sugar you just put in has been mixed into the egg mixture. You can do this by putting your fingers lightly in the mixture. If it is gritty, the sugar has not been mixed well enough yet.

Continue mixing until stiff peaks in the mixture form. Spoon out mixture onto a parchment paper lined baking tray. Try to scoop out a little from the centres so they are like nests for the fruit that is to come. Bake at 250 degrees for approximately 25 minutes or until they start to slightly brown at the top. Allow to cool.

Top Meringues with slices of banana and strawberry and add a slight drizzle of chocolate sauce, honey or sprinkle of powdered sugar.
