So it turns out that I have the best friends in the world. A great group of really awesome people who embrace and encourage my foodie self. One of those people is my friend Meghan – even though she’s living in Australia at the moment, she still finds time to send me great recipes. Here is one for a Feta, Lemon and Dill Slather – which is like a spread or dip that you can serve on pita, crackers or bread. Thanks for the great recipe Cooper (that would be Meghan’s last name/nickname)!

Feta, Lemon and Dill Slather

  • 250g feta cheese, crumbled
  • 3 tbsp. olive oil
  • 2 garlic cloves
  • Finely grated peel of 1 lemon
  • 1 tbsp. lemon juice
  • Generous grinding black pepper
  • 3 tbsp.  freshly chopped dill
  • 2 tbsp.  snipped chives or 1 small green onion thinly sliced

 Place Feta, oil, garlic, peel, juice and black pepper in a food processor. Whirl until it starts to blend together but still has texture. Stir in dill and chives until mixed. Serve with crackers, baguette or as a spread for sandwiches, wraps or burgers

Makes 1 ½ cups
