Yesterday was Hubby’s birthday and we’ve been celebrating for days. On Saturday I attempted to have a surprise BBQ for him that worked out to be less of a surprise than I was hoping for. It was still a great time – and there was of course a great cake.

This Mojito No Bake Cheese Cake takes about 20 minutes to put together, then you freeze it. Take it out of the freezer about 30 minutes before you want to serve and that’s it! I had made it days earlier so Hubby wouldn’t find me making a cake and ask questions. And for a ‘cheese cake’ it is very refreshing.

Mojito No Bake Cheese Cake
1 cup smashed pretzel crumbs
 1/4 cup melted butter
1 brick cream cheese
2 limes
2/3 cup sugar
1 TBSP finely chopped mint
3/4 cup whipped cream

Combine the pretzels and butter – press into the bottom a 9 inch pie plate that has been wrapped with plastic wrap, or use a 9 inch spring form pan. Put in the freezer until you are ready to use it.

In a bowl combine the cream cheese, zest of two limes, juice of one lime, mint, sugar and whipped cream. Spread over the pretzel crust. Wrap with plastic wrap and freeze until 1/2 hour before you are ready to eat.
