Roasting garlic is such an amazing way to transform an everyday ingredient into an extraordinary one! It’s also quick and easy to do.

Step 1: Preheat your oven to 400 degrees. Peel the outside layer of skin off of the garlic but leave enough to keep individual cloves bound together.

Step 2: With a sharp knife cut a 1/4 inch off the top of the garlic bulb to expose the cloves.

Step 3: Put the garlic bulb into a muffin tin – one bulb per compartment, exposed garlic up. This keeps the bulb nice and tight – but you can also put the bulbs in a baking dish. Spread a drizzle of olive oil all over the bulb. Make sure it is covered or it will burn.

Step 4: Cover with tinfoil and bake for 30 minutes or until you can poke with a fork and the garlic is soft. You should still feel a slight resistance – you are looking for soft garlic not mushy.

Step 5: Use in your fave recipe to substitute fresh garlic!
