Cheaper than ordering a take out pizza – here is my version on a potato pasta called gnocchi. Now I suppose you could make this sauce and use it on regular pasta – but the gnocchi is so easy! And it adds some potato to the mix which, even though it’s a starch, is still a veg! So right there it’s better for you than regular pasta. You can buy pre-made gnocchi at most any grocery store – but if you are paying more than $3 you are being hosed and should just make it from scratch. The best recipe for gnocchi I’ve ever found comes from another Ottawa food blogger Marysol from She Eats Bears. Here is her recipe.

I don’t own a gnocchi paddle so I just end up cutting it into plain little pillows – they still taste amazing, maybe just not as fancy as they could be. But it saves you a LOT of time. And lets face it, the easier something is to do the more likely I will do it again. Especially when the results are delish.

The key to good gnocchi is an amazing sauce. These little guys may be light fluffy and heaven in your mouth, but they are a touch plain and need some pizzaz … in this case pizza pizzaz!

Pizza Pasta Sauce
Olive oil
1/2 cup chopped red onion
1 clove minced garlic
1 cup shredded cheese – something flavourful like swiss or old cheddar is great
1/4 cup skim milk
1 TBSP flour
1 TBSP minced fresh basil
1/2 cup of your fave homemade pizza sauce, or store bought
1 TBSP lemon zest

Have your gnocchi ready and set aside – don’t boil it just yet! First make the sauce and once you have finished with it you can go ahead and boil the gnocchi.

In a deep skillet saute onions and garlic in a splash of olive oil for 4 minutes over medium heat. Add shredded cheese and milk and stir until melted. Add flour to thicken the sauce.

Add all other ingredients and turn to low to heat through. NOW is the time to boil the gnocchi. When you have drained your gnocchi toss it into the skillet with the sauce to coat it if you have enough room, if not you can add the sauce to the pasta once it is on the plate.

This is just the basics – feel free to add any of your best loved pizza toppings – I added mushrooms to mine, but bacon, pepperoni and peppers would all make wonderful additions. Happy eating!
