Here are another few recipes that are easy to make when you are cooking for one. Using repeating ingredients, making fewer servings and minimizing on effort and dishes these meals fit into any lifestyle no matter how busy!

Beef Stew

Ingredients
1 lb stewing beef
1 1/2 cups cubed potatoes
1 cup chopped carrots
1/2 onion, chopped
1/2 can undrained diced tomatoes
1/4 cup BBQ sauce of your choice
1 cup broth (beef, chicken veg will do. Or any other liquid – water and beer work great)
1 clove minced garlic
1/2 TBSP mustard (Dijon if you like)
1 bay leaf
1 TSP each dried thyme and marjoram
1/2 TSP sugar
Salt / Pepper to taste
1 TBSP cornstarch

Combine all ingredients minus the cornstarch into a slow cooker and cook on low for 6 hours or until veg is tender and beef reaches a minimum internal temperature of 165 degrees. Add the cornstarch to 1/4 cup of water and add to the slow cooker. Cook one hour more.

BBQ Chicken Pasta

Ingredients
Olive Oil
1/2 onion chopped finely
1 clove minced garlic
2 chicken breasts cubed
1 cup sliced mushrooms
1/2 red or green pepper, chopped
1/2 can diced tomatoes undrained
1/2 cup BBQ sauce
Pasta
Shredded Cheese

Heat oil in a non stick pan. Cook garlic and onion for 1 -2 minutes. Add chicken and cook until no longer pink and internal temperature has reached a minimum of 170 degrees. Add mushrooms and peppers and cook 3-4 minutes until the veg is tender. Add sauces and / or tomatoes. Cover and simmer 5 minutes. Remove from heat.

Cook pasta according to package directions. When finished top with BBQ chicken sauce and a handful of shredded cheese.

Chicken CacciatoreIngredients
2 chicken breasts cut into cubes
1/2 red or green pepper, chopped
1/2 onion, chopped
1 1/2 cups sliced mushrooms
1 can undrained diced tomatoes
1 can tomato paste
1/2 cup white or red wine
1 TSP each dried basil and oregano
1 clove minced garlic
Salt and Pepper to taste
Rice or Pasta

Preheat oven to 350 degrees.

Mix all ingredients minus the rice or pasta in an oven safe baking dish. Mix well. Cover and bake 1 hour until chicken reaches 170 degrees and is tender / no longer pink.

After 50 minutes of cooking start making your rice or pasta. Serve with chicken and sauce.
