Gluten – A substance present in cereal grains, esp. wheat, that is responsible for the elastic texture of dough.

Home Fries – boiled, sliced or diced potatoes fried in butter or oil sometimes with onions and seasonings.

Rocket – another name for Arugula, a salad green from the mustard family.

Immerse – to plunge, drop or dip into a liquid and cover completely.

Dry cure – to dehydrate a food by covering or infusing it with salt, sugar and sometimes a nitrate.

Mezzaluna – a kitchen tool with a semicircular blade, used for chopping.

Coeur a la Crème – a heart shaped dessert made from cream cheese that has been whipped with cream or sour cream and made in a wicker or cheese cloth lined mold where it dries as the liquid and whey drain. It is usually for Valentines day and garnished with berries.
